Strictly speaking, amaranth is not a grain. It is reminiscent of millet, but the grains are smaller - however it is used in the same way. In some countries the leaves are eaten as a vegetable. Amaranth is high in protein and minerals, and is gluten free. This granola is great with yoghurt and fruit, or eaten dry in kids lunch-boxes.
